Cheesy Bacon-Stuffed Chicken Breast
This American dinner dish combines chicken breasts with crispy bacon and Parmesan cheese for a flavourful main course. The chicken is stuffed, dipped in egg and Italian breadcrumbs, then baked until perfectly cooked. It serves four people and takes about 70 minutes to prepare and cook, resulting in a satisfying and cheesy meal that is sure to please.
Ingredients
- 1 tablespoon olive oil
- 2 cups Italian bread crumbs, divided
- 4 slices peppered bacon
- 4 (5 ounce) skinless, boneless chicken breast halves
- 0.5 cup shredded Parmesan cheese, divided
- 2 large eggs, well beaten
Method
- Set your oven to 350 degrees F (175 degrees C). Coat a baking dish with olive oil and scatter 3 pinches of bread crumbs over the base.
- Cook the bacon slices in a large skillet, flipping them now and then, for 10 to 11 minutes until they are browned and crisp. Transfer the bacon to paper towels to drain.
- Slice each chicken breast almost all the way through and open it up. On one side of each breast, layer 2 tablespoons of shredded Parmesan, followed by a bacon slice and 1 ½ tablespoons more Parmesan.
- Seal the chicken breasts shut. Coat each one first in the beaten egg, then roll them in the bread crumbs. Arrange them in the prepared dish and scatter the leftover Parmesan over the top.
- Bake in the heated oven for about 35 minutes. The chicken is ready when it is cooked through with clear juices, and an instant-read thermometer shows 165 degrees F (74 degrees C).
