Cheesy Bacon, Potato, and Egg Casserole
This substantial breakfast bake combines crispy bacon, two types of potato, and plenty of cheddar cheese with a seasoned egg custard. Baked until golden and set, it's a filling dish ideal for a weekend brunch or special occasion. The recipe yields a generous portion, making it suitable for serving a large family or guests.
Ingredients
- 16 ounces bacon
- 1 green bell pepper, seeds removed and finely chopped
- 1/2 red bell pepper, seeds removed and finely chopped
- 1/2 jalapeno, seeds removed and chopped
- 2 roma tomatoes, chopped
- 2 tablespoons fresh Italian parsley, chopped
- 4 green onions, stalks chopped
- 12 eggs
- 1 cup half-and-half
- 2 cups diced potatoes, diced hash browns
- 1 1/2 cups shredded potatoes (hash browns)
- 1 cup diced cheddar cheese cube
- 2 cups shredded cheddar cheese, divided
- 1/2 teaspoon lawry's seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon yellow mustard powder
- 1/2 teaspoon paprika
Method
- Set your oven to 350 and coat a 9x13 inch baking dish with nonstick spray.
- Prepare the bacon as directed on its packaging, then chop it once it has cooled.
- Place the 12 eggs in a large bowl and whisk them together with the cup of half-and-half.
- Incorporate the 1/2 teaspoon of Lawry's seasoning, black pepper, salt, yellow mustard powder, and paprika into the egg mixture.
- Add the 2 cups of diced potatoes, 1 1/2 cups of shredded hash browns, the cup of cheddar cheese cubes, and one cup of the shredded cheddar to the bowl, mixing thoroughly.
- Set aside a half cup of the fresh vegetables and herbs and 1/2 cup of the chopped bacon for later. Stir the remaining vegetables, herbs, and bacon into the bowl.
- Transfer the combined mixture into the prepared dish. Scatter the reserved bacon, vegetables, herbs, and the remaining shredded cheese over the top.
- Bake for 50 minutes or until the centre is fully set, covering the dish with foil halfway through the cooking time.
- Let the casserole stand for a short while to cool slightly before you cut and serve it.
