Cheesy Bacon Microwave Potatoes
This convenient recipe is ideal for making in an RV or any kitchen with a microwave. Cubed potatoes are cooked with onion until tender, then combined with crispy bacon, milk or cream, and a generous amount of grated cheddar cheese for a rich, comforting result. The method is straightforward and uses simple ingredients for a filling dish that serves four to six people.
Ingredients
- 2 tablespoons margarine or 2 tablespoons bacon drippings
- 2 cups chopped onions
- 1/2 cup hot water
- 12 medium potatoes, cut into 1/2 inch cubes
- salt and pepper, to taste
- 4 slices crumbed bacon
- 1/4 cup milk or 1/4 cup cream
- 2 cups grated cheddar cheese (old preferred)
Method
- Place the butter or bacon drippings, hot water, and chopped onion into a 1-1/2 quart casserole dish.
- Cook in the microwave on high for 2-3 minutes.
- Add the cubed potatoes, salt, and pepper to the dish and stir to combine.
- Cover the dish and microwave in 5 minute intervals, stirring between each, until the potatoes are cooked, which should take 25-30 minutes.
- Once the potatoes are tender, mix in the milk or cream, crumbled bacon, and grated cheddar cheese until the mixture is smooth.
- Serve and enjoy.
- You may choose to peel the potatoes or leave the skins on, depending on if they are new or old.
