Cheesy Bacon Corn Casserole

Ingredients

  • 4 ounces cream cheese, softened
  • 0.5 cup whole milk
  • 0.25 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 4.5 cups defrosted frozen corn, drained on paper towels
  • 3 cups shredded Cheddar cheese, divided
  • 10 slices cooked bacon, crumbled
  • kosher salt to taste
  • freshly ground black pepper
  • 2 tablespoons chives for garnish

Method

  1. Set your oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  2. In a large bowl, whisk the softened cream cheese with the milk, cream, flour, paprika and garlic powder until smooth. Gently stir in the drained corn, 2 1/2 cups of the Cheddar cheese and the crumbled bacon. Add salt and pepper as desired. Transfer this mixture to the prepared dish and top with the remaining Cheddar cheese.
  3. Place the dish in the oven and bake for about 20 minutes, or until the cheese has melted and turned a light golden brown. Take it out and let it stand for 5 minutes. Finish by scattering chopped chives over the top before you serve.
