Cheesy Bacon Corn Casserole
This indulgent American casserole combines sweet corn with a creamy, cheesy sauce and savoury bacon. It's a crowd-pleasing side dish that's ideal for Thanksgiving or other festive meals. The mixture is baked until golden and bubbly, then finished with fresh chives for a pop of colour and flavour. Ready in just 35 minutes, it serves eight people generously.
Ingredients
- 4 ounces cream cheese, softened
- 0.5 cup whole milk
- 0.25 cup heavy cream
- 3 tablespoons all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 4.5 cups defrosted frozen corn, drained on paper towels
- 3 cups shredded Cheddar cheese, divided
- 10 slices cooked bacon, crumbled
- kosher salt to taste
- freshly ground black pepper
- 2 tablespoons chives for garnish
Method
- Set your oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
- In a large bowl, whisk the softened cream cheese with the milk, cream, flour, paprika and garlic powder until smooth. Gently stir in the drained corn, 2 1/2 cups of the Cheddar cheese and the crumbled bacon. Add salt and pepper as desired. Transfer this mixture to the prepared dish and top with the remaining Cheddar cheese.
- Place the dish in the oven and bake for about 20 minutes, or until the cheese has melted and turned a light golden brown. Take it out and let it stand for 5 minutes. Finish by scattering chopped chives over the top before you serve.
