  • 3 bacon, rashers thinly sliced
  • 1 large onion, thinly sliced (200g)
  • 2 cloves garlic, crushed
  • 2 medium zucchini, coarsely grated (240g)
  • 2 medium carrots, coarsely grated (240g)
  • 1/2 cup self-raising flour
  • 3 eggs, lightly beaten
  • 1 cup grated cheese
  • 2 tablespoons chili sauce

Method

  1. Lightly grease a 19cm square cake pan and line the base with baking paper.
  2. Warm the oil in a large pan, then add the sliced bacon, onion and crushed garlic. Cook while stirring until the onion has softened.

  4. In a medium bowl, combine the cooled vegetable mixture with the sifted self-raising flour, lightly beaten eggs, grated cheese and chilli sauce. Mix everything together thoroughly.
  5. Transfer the combined mixture into the prepared cake pan, spreading it out evenly.
  6. Place the pan in a moderate oven and bake for about 30 mins or until the slice is firm to the touch.
