Cheesy Bacon and Vegetable Slice
This savoury slice combines crispy bacon with grated zucchini and carrot in a cheesy, baked batter. It's a straightforward dish that bakes in a moderate oven until firm, making it ideal for a packed lunch or a quick snack. The preparation involves cooking the bacon and vegetables before mixing them with flour, eggs and cheese. The result is a hearty and flavourful bake that serves four people.
Ingredients
- 2 tablespoons vegetable oil
- 3 bacon, rashers thinly sliced
- 1 large onion, thinly sliced (200g)
- 2 cloves garlic, crushed
- 2 medium zucchini, coarsely grated (240g)
- 2 medium carrots, coarsely grated (240g)
- 1/2 cup self-raising flour
- 3 eggs, lightly beaten
- 1 cup grated cheese
- 2 tablespoons chili sauce
Method
- Lightly grease a 19cm square cake pan and line the base with baking paper.
- Warm the oil in a large pan, then add the sliced bacon, onion and crushed garlic. Cook while stirring until the onion has softened.
- Stir in the grated zucchini and carrot. Continue cooking for about 5 mins until any released liquid has evaporated. Allow the mixture to cool.
- In a medium bowl, combine the cooled vegetable mixture with the sifted self-raising flour, lightly beaten eggs, grated cheese and chilli sauce. Mix everything together thoroughly.
- Transfer the combined mixture into the prepared cake pan, spreading it out evenly.
- Place the pan in a moderate oven and bake for about 30 mins or until the slice is firm to the touch.
