Cheesy Bacon and Tequila Dip
This rich and smoky Mexican dip combines refried beans, cheddar cheese, and crispy bacon with a hint of tequila and jalapeños. It's cooked until bubbly and served warm, garnished with fresh tomatoes and spring onions. Perfect for scooping up with tortilla chips, this crowd-pleasing recipe is ready to enjoy in just 25 minutes.
Ingredients
- 100g of Cheddar cheese, grated (reserve a couple of handfuls for garnish)
- 1 Old El Paso™ Smoky BBQ Fajita Seasoning Mix
- 1 can (435g) Old El Paso™ Refried Beans
- 2 tbsp tequila
- 2 garlic cloves, crushed
- 3 spring onions, sliced (reserve 1 tsp for garnish)
- 1 jar of Old El Paso™ Sliced Green Jalapeños
- 1/2 tsp cumin
- 6-7 tbsp Old El Paso™ Thick ‘n’ Chunky Salsa
- 4 slices of bacon
- 2 tomatoes, diced
- Old El Paso™ Original Nachips
Method
- In a small bowl, combine the grated cheese with the Smoky BBQ Fajita Seasoning Mix, setting aside a couple of handfuls of cheese for later.
- Transfer the refried beans, tequila, crushed garlic, sliced spring onions, a handful of jalapeños, the seasoned cheese, cumin, and 6-7 tbsp salsa into a saucepan.
- Heat the saucepan, cooking the mixture until it becomes bubbly, which should take about 7 minutes.
- While the bean mixture cooks, add a dash of oil to a hot pan and fry the 4 bacon slices until crisp.
- Take the bacon from the pan and cut it into small pieces.
- Add half of the chopped crispy bacon to the saucepan with the refried beans and stir it in.
- Transfer the dip to a serving dish and top with diced tomatoes, the reserved spring onions, the remaining cheese, and the rest of the bacon.
- Serve immediately with Old El Paso™ Original Nachips for dipping.
