This rich and smoky Mexican dip combines refried beans, cheddar cheese, and crispy bacon with a hint of tequila and jalapeños. Cheesy Bacon and Tequila Dip

Ingredients

  • 100g of Cheddar cheese, grated (reserve a couple of handfuls for garnish)
  • 1 Old El Paso™ Smoky BBQ Fajita Seasoning Mix
  • 1 can (435g) Old El Paso™ Refried Beans
  • 2 tbsp tequila
  • 2 garlic cloves, crushed
  • 3 spring onions, sliced (reserve 1 tsp for garnish)
  • 1 jar of Old El Paso™ Sliced Green Jalapeños
  • 1/2 tsp cumin
  • 6-7 tbsp Old El Paso™ Thick ‘n’ Chunky Salsa
  • 4 slices of bacon
  • 2 tomatoes, diced
  • Old El Paso™ Original Nachips

Method

  1. In a small bowl, combine the grated cheese with the Smoky BBQ Fajita Seasoning Mix, setting aside a couple of handfuls of cheese for later.
  2. Transfer the refried beans, tequila, crushed garlic, sliced spring onions, a handful of jalapeños, the seasoned cheese, cumin, and 6-7 tbsp salsa into a saucepan.
  3. Heat the saucepan, cooking the mixture until it becomes bubbly, which should take about 7 minutes.
  4. While the bean mixture cooks, add a dash of oil to a hot pan and fry the 4 bacon slices until crisp.
  5. Take the bacon from the pan and cut it into small pieces.
  6. Add half of the chopped crispy bacon to the saucepan with the refried beans and stir it in.
  7. Transfer the dip to a serving dish and top with diced tomatoes, the reserved spring onions, the remaining cheese, and the rest of the bacon.
  8. Serve immediately with Old El Paso™ Original Nachips for dipping.
