Cheesy Aussie Chicken

Ingredients

  • 4 boneless skinless chicken breast halves
  • 2 teaspoons seasoning salt
  • 6 slices bacon, halved
  • 1/2 cup honey
  • 1/4 cup prepared mustard
  • 1/4 cup light corn syrup
  • 1/4 cup mayonnaise
  • 1 tablespoon dried onion flakes
  • 2 cups shredded cheddar cheese
  • 1 cup sliced fresh mushrooms (optional)

Method

  1. Heat your oven to 350 degrees Fahrenheit.
  2. Coat the chicken breast halves with the seasoning salt.
  3. Leave the chicken to one side.
  4. Cook the halved bacon slices in a medium-large skillet until they are crisp.
  5. Remove the bacon from the skillet and set it aside.
  6. Pour off most of the bacon fat, then cook the chicken breasts in the same pan.
  7. Cook the chicken until it is browned on both sides.
  8. While the chicken cooks, mix the mustard, honey, light corn syrup, mayonnaise, and dried onion flakes in a small bowl.
  9. Stir this mixture until it is well combined.
  10. Once browned, transfer the chicken to a 9x13 baking dish.
  11. Cover the chicken breasts with half of the prepared mustard mixture.
  12. Keep the remaining mustard sauce to use when serving.
  13. Top the chicken with the cooked bacon, optional sliced mushrooms, and shredded cheddar cheese.
  14. Bake for 15 minutes, or until the cheese has melted and the chicken is cooked through.
  15. Serve the dish with the reserved mustard sauce.
