Cheesy Apple Bacon Breakfast Casserole
This satisfying breakfast bake combines sweet apple pieces with smoky bacon and sharp cheddar cheese in a simple egg batter. Ingredients
- 1 large apple, peeled and chopped (I use Granny Smith or Golden Delicious)
- 2 tablespoons brown sugar
- 1 1/2 cups bisquck baking mix
- 1 1/2 cups milk
- 4 eggs
- 2 cups shredded cheddar cheese
- 1 lb apple smoked bacon, cooked and crumbled
Method
- Preheat your oven to 375°F and lightly grease a 9x9 inch square baking pan.
- Combine the chopped apple with the brown sugar, then arrange this mixture evenly across the base of your prepared dish.
- In a separate bowl, whisk together the baking mix, milk and eggs until you have a smooth batter, then pour this over the apple layer.
- Evenly scatter the shredded cheddar cheese and the crumbled cooked bacon over the top of the batter.
