Cheesy Appetizer Loaf

This quick cheesy appetiser loaf is an ideal party snack, ready in only 6 minutes. A mixture of mozzarella cheese, mayonnaise, garlic powder and chopped Spanish olives is spread over halved French bread, sprinkled with paprika and broiled until the cheese melts. It is then sliced into 24 pieces and served warm. You can also use chopped canned mushrooms, ham or turkey in place of the olives for a different flavour.

Cheesy Appetizer Loaf

Ingredients

  • 3 tablespoons mayonnaise
  • 1/2 teaspoon garlic powder
  • 1 (8 ounce) package mozzarella cheese, crumbled
  • 2 tablespoons chopped Spanish olives
  • 1 loaf French bread, cut lengthwise in half (about 24 inches)
  • paprika

Method

  1. Turn on your broiler to preheat.
  2. Combine the mayonnaise, garlic powder, crumbled mozzarella cheese and chopped Spanish olives in a bowl.
  3. Evenly cover the cut sides of the French bread loaf halves with the cheese mixture.
  4. Lightly dust the top with paprika.
  5. Position the prepared bread on a baking sheet.
  6. Broil the loaf for 1 minute, keeping it 6 inches from the heat source, until the cheese has melted.
  7. Slice the warm loaf into 24 pieces for serving.
  8. For a variation, you can replace the olives with 2 tablespoons of chopped and drained canned mushrooms, or finely chopped ham or turkey.
