Cheesiest Potato Soup
This indulgent American potato soup is a dinner favourite, blending puréed potatoes with a generous amount of sharp Cheddar cheese and heavy cream. Flavoured with dried dill, black pepper, and a touch of cayenne, it creates a luxuriously smooth and cheesy bowl. Ready in just 45 minutes, it serves six people a deeply satisfying and creamy meal.
Ingredients
- 2 tablespoons butter
- 1 cup diced onion
- 3 cups chicken broth
- 2.5 cups peeled and diced potatoes
- 1.75 cups shredded sharp Cheddar cheese
- 1 cup heavy cream
- 0.25 teaspoon dried dill weed
- 0.25 teaspoon ground black pepper
- 0.25 teaspoon salt
- 0.125 teaspoon ground cayenne pepper
Method
- Place the butter in a large pot to melt. Cook the diced onion, stirring, until it becomes soft. Pour in the chicken broth and add the potatoes, then bring the mixture to a boil. Cover the pot, lower the heat, and let it simmer for 15 to 20 minutes until the potatoes are tender.
- Use an immersion blender to purée the soup contents until completely smooth. Alternatively, transfer the soup to a blender or food processor to blend. Return the soup to the pot and warm it through.
- Add the shredded sharp Cheddar cheese, heavy cream, dried dill weed, ground black pepper, salt, and ground cayenne pepper to the pot. Stir continuously and bring the soup to a low boil. Keep cooking and stirring for about 5 minutes until the soup thickens.
