These indulgent bar cookies unite two beloved desserts. A fudgy chocolate brownie batter, made with melted bittersweet chocolate and sour cream, is layered with a sweetened cream cheese mixture. The two are swirled together before baking, creating a marbled effect. After cooling, the result is a dense, moist brownie with pockets of tangy cheesecake, perfect for slicing into squares. This recipe yields one pan of these irresistible treats.

Cheesecake Swirl Brownies

Ingredients

  • 6 tablespoons (3 ounces) unsalted butter
  • 6 ounces bittersweet chocolate, finely chopped
  • 1/4 teaspoon salt
  • 3/4 cup (5 1/4 ounces) plus 4 tablespoons granulated sugar, divided
  • 3 large eggs, divided
  • 2 teaspoons vanilla extract, divided
  • 1/4 cup sour cream
  • 3/4 cup (3 3/4 ounces) all purpose flour
  • 1/4 cup (3/4 ounce) cocoa
  • 1/2 teaspoon baking powder
  • 8 ounces cream cheese, softened

Method

  1. Position an oven rack in the centre of your oven and heat it to 350°F (175°C). Prepare a 9- by 9-inch baking pan by greasing it.
  2. Place a large bowl over a pan of gently simmering water to melt the butter and chopped chocolate together until combined. Take the bowl off the heat and whisk in the salt, 3/4 cup sugar, 2 eggs, 1 teaspoon vanilla, and the sour cream. Incorporate the flour, cocoa, and baking powder, whisking until you have a smooth batter. Place dollops of this batter into your prepared pan without spreading them out.
  3. Using a separate large bowl, mix the softened cream cheese with the remaining 4 tablespoons of sugar until the mixture is lump-free. Whisk in the last teaspoon of vanilla and the final egg. Spoon portions of this cheesecake batter into the gaps between the brownie dollops in the pan.
  4. Take a butter knife or offset spatula and gently swirl the two batters together to create a marbled pattern. Place the pan in the oven and bake for 20 to 25 minutes, until the centre is just set. Allow the brownies to cool completely in the pan for an hour before cutting them into bars for serving.
