Cheesecake Stuffed Strawberries
These elegant strawberries are hollowed out and filled with a sweet, fluffy cream cheese mixture. The simple dessert is quick to assemble, taking only 15 minutes from start to finish. Optionally finished with a sprinkle of graham cracker crumbs, they make a delightful treat for gatherings. This recipe yields 16 to 20 individual stuffed berries.
Ingredients
- 1 lb fresh strawberries, rinsed and pat dry
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 graham cracker crumbs (optional)
Method
- Remove the stems from the strawberries using a paring knife. Hollow out the centre of each berry to form a cavity for the filling, taking care not to pierce the sides. Slice a small piece from the pointed end so each strawberry can stand upright on a plate or serving tray.
- Combine the softened cream cheese, powdered sugar, and vanilla extract in a medium bowl. Use an electric mixer to beat the ingredients for about 2 minutes until light and fluffy. Transfer the mixture to a pastry bag and pipe it into the prepared strawberry wells, creating a small mound on top.
- If desired, dust the top of each filled strawberry with graham cracker crumbs.
- Serve the strawberries chilled.
