Cheesecake Stuffed Strawberries

Ingredients

  • 1 lb fresh strawberries, rinsed and pat dry
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 graham cracker crumbs (optional)

Method

  1. Remove the stems from the strawberries using a paring knife. Hollow out the centre of each berry to form a cavity for the filling, taking care not to pierce the sides. Slice a small piece from the pointed end so each strawberry can stand upright on a plate or serving tray.
  2. Combine the softened cream cheese, powdered sugar, and vanilla extract in a medium bowl. Use an electric mixer to beat the ingredients for about 2 minutes until light and fluffy. Transfer the mixture to a pastry bag and pipe it into the prepared strawberry wells, creating a small mound on top.
  3. If desired, dust the top of each filled strawberry with graham cracker crumbs.
  4. Serve the strawberries chilled.
