Cheesecake Squares (Crustless)

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup plain yogurt
  • 1 teaspoon lemon juice
  • 1/2 cup buttermilk biscuit mix (like Bisquick)
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 2 teaspoons vanilla

Method

  1. Set your oven to heat to 350 degrees.
  2. Beat the softened cream cheese with 1 cup of sugar in a bowl until you have a smooth mixture.
  3. Incorporate the eggs, plain yogurt, vanilla, lemon juice and buttermilk biscuit mix.
  4. Blend everything together just until the batter is smooth.
  5. Transfer the mixture into a greased 9 inch square baking dish.
  6. Place in the oven to bake for 25-30 minutes, until the centre is set.
  7. In a separate bowl, mix the sour cream with 2 tablespoons of sugar and 2 teaspoons of vanilla until smooth.
  8. Gently spread this sour cream mixture over the top of the baked cheesecake.
  9. Return the dish to the oven and bake for 4 minutes.
  10. Allow the cheesecake to cool on a wire rack for one hour.
  11. Place it in the refrigerator to chill thoroughly.
  12. Slice the chilled cheesecake into small squares.
  13. You can add a garnish of fresh fruit or cherry pie filling if you wish.
  14. It is also excellent served plain.
