Cheesecake Squares (Crustless)
These decadent cheesecake squares are prepared without a base, making them a straightforward bar cookie. The rich batter, featuring cream cheese, yogurt, and a biscuit mix, is baked until just set before being topped with a sweetened sour cream layer. After cooling and chilling, they are sliced into small portions, perfect for serving plain or with a fruit garnish. The recipe makes 36 servings.
Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup plain yogurt
- 1 teaspoon lemon juice
- 1/2 cup buttermilk biscuit mix (like Bisquick)
- 1 cup sour cream
- 2 tablespoons sugar
- 2 teaspoons vanilla
Method
- Set your oven to heat to 350 degrees.
- Beat the softened cream cheese with 1 cup of sugar in a bowl until you have a smooth mixture.
- Incorporate the eggs, plain yogurt, vanilla, lemon juice and buttermilk biscuit mix.
- Blend everything together just until the batter is smooth.
- Transfer the mixture into a greased 9 inch square baking dish.
- Place in the oven to bake for 25-30 minutes, until the centre is set.
- In a separate bowl, mix the sour cream with 2 tablespoons of sugar and 2 teaspoons of vanilla until smooth.
- Gently spread this sour cream mixture over the top of the baked cheesecake.
- Return the dish to the oven and bake for 4 minutes.
- Allow the cheesecake to cool on a wire rack for one hour.
- Place it in the refrigerator to chill thoroughly.
- Slice the chilled cheesecake into small squares.
- You can add a garnish of fresh fruit or cherry pie filling if you wish.
- It is also excellent served plain.
