These quick cheesecake parfaits offer a French-inspired dessert that's perfect for entertaining. A creamy mixture of pudding, double cream, and sour cream is layered with crisp vanilla wafers and tart fresh raspberries in individual glasses. Ingredients
- 2 (90g) boxes cheesecake instant pudding mix
- 480ml double cream
- 240ml milk
- 480ml sour cream
- Vanilla wafers
- Fresh raspberries
- Whipped cream, if desired
Method
- Place the cheesecake pudding mix, double cream, milk, and sour cream into a medium bowl. Use an electric mixer to beat the contents until soft peaks form. Once combined, cover the bowl and place it in the refrigerator to chill for 2 to 3 hours.
- Take your individual serving dishes and begin assembling the parfaits. Alternate layers of the chilled pudding mixture, vanilla wafers, and fresh raspberries. Continue this pattern, making sure the final layer on top consists of raspberries.
- The parfaits are best enjoyed straight away. Add a spoonful of whipped cream on top of each one just before serving, if you like.
