Cheesecake Pancakes
Transform your morning with these delightful cheesecake pancakes. The recipe incorporates frozen cream cheese pieces into a batter made with baking mix, graham cracker crumbs, and sugar. Cooked until golden, they are finished with a simple topping of fresh strawberries mixed with syrup for a sweet and satisfying breakfast.
Ingredients
- 1 (8 ounce) package cream cheese
- 2 cups original Bisquick baking mix
- 1/2 cup graham cracker crumbs
- 1/4 cup sugar
- 1 cup milk
- 2 eggs
- 1 cup sliced fresh strawberries
- 1/2 cup strawberry syrup for pancake
Method
- Slice the cream cheese lengthwise into four pieces and arrange them on an ungreased cookie sheet. Cover and place in the freezer for 8 hours or overnight.
- Lightly brush a griddle or skillet with vegetable oil or use cooking spray. Heat the griddle to 375°F or warm the skillet.
- Remove the cream cheese and cut it into bite sized pieces. In a large bowl, combine the baking mix, graham cracker crumbs, sugar, milk and eggs, stirring until smooth. Gently fold in the cream cheese pieces.
- Pour just under 1/3 cup of batter for each pancake onto the hot cooking surface. Cook until the edges look dry, then flip and continue cooking until both sides are a golden brown colour.
- Combine the sliced strawberries with the syrup in a small bowl. Serve the cooked pancakes topped with the strawberry mixture.
