Cheesecake Fruit Salad
This American dessert salad combines a creamy cheesecake-flavoured base with fresh fruit. The dressing is made from instant pudding mix, milk, cream cheese and whipped topping. It is then folded with a colourful assortment of grapes, strawberries, bananas, blackberries, raspberries and blueberries. The result is a light, fruity and creamy treat that requires no baking and is ready to serve after a brief chill.
Ingredients
- 1.5 cups milk
- 1 (3.4 ounce) package instant cheesecake pudding mix
- 2 ounces cream cheese, softened
- 1 (8 ounce) container frozen whipped topping, thawed
- 3 cups grapes
- 1 pound fresh strawberries, hulled and sliced
- 2 large bananas, sliced
- 1 (6 ounce) container fresh blackberries
- 1 (6 ounce) container fresh raspberries
- 1 (6 ounce) container fresh blueberries
Method
- In the bowl of a stand mixer, combine the milk and instant cheesecake pudding mix, beating until incorporated. Gradually add the softened cream cheese, then increase the mixer speed to high and beat until the mixture is smooth and has thickened slightly. Using a spatula, carefully fold in the thawed frozen whipped topping until the mixture is well blended, light and creamy.
- Add the grapes, sliced strawberries, sliced bananas, blackberries, raspberries and blueberries to the creamy mixture. Gently fold everything together until all the fruit pieces are evenly coated with the dressing.
- Cover the bowl and place the fruit salad in the refrigerator. Chill it until you are ready to serve.
