Cheesecake for Breakfast Omelette
This unique breakfast dish combines a fluffy omelette with a sweet, creamy cheesecake-style filling. The eggs are whisked with sour cream and sugar before cooking gently in a pan. A warm mixture of cream cheese, vanilla and sugar is spread over the cooked omelette, then finished with fruit preserves and a dollop of whipped cream for a decadent start to the day. It serves three people and takes only 13 minutes to prepare.
Ingredients
- 1 tablespoon butter
- 6 eggs
- 4 tablespoons sour cream
- 2 tablespoons white sugar
- 4 ounces cream cheese
- 1 teaspoon vanilla
- 6 tablespoons fruit preserves or 6 tablespoons sliced & sugared fresh fruit
- 2 ounces whipped cream
Method
- Combine the eggs, sour cream and one tablespoon of sugar in a bowl. Whisk this mixture for five minutes, or use an electric mixer on a low setting for two minutes.
- Melt the butter in a heavy 8-inch Teflon coated frying pan over the lowest heat. Pour the egg mixture into the pan.
- As the eggs cook, place the cream cheese in a bowl. Warm it in a microwave for 45 seconds. Check the temperature. it should be warm but not hot. If needed, heat in further 15 second bursts.
- Stir the vanilla and the remaining sugar into the warmed cream cheese until thoroughly combined.
- Flip the omelette by sliding it onto a plate, covering it with the fry pan and inverting it. Return it to the heat until firm, which should take about 30 seconds.
- Spread the cream cheese mixture over the top of the cooked omelette. Then add the fruit topping over the cream cheese layer.
- Add a finishing touch of whipped cream on top.
- Serve accompanied by your preferred toast, buttered and sprinkled with cinnamon sugar.
