These simple tostados are a fantastic way to use leftover turkey or ham. Flour tortillas are brushed with oil, topped with mango chutney, meat, grated cheddar, and spring onions, then baked until crisp. They make a perfect hot snack, lunch, or starter for two, ready in about 20 minutes.

Cheese & Chutney Tostados

Ingredients

  • 2small flour tortillas about 20cm
  • dash of olive oil
  • 2 heaped tbsp mango chutney (we like Geeta’s Premium with whole spices)
  • 100g cooked turkey or ham torn into strips
  • 100g cheddar grated
  • 2 spring onions chopped

Method

  1. Set your oven to fan 180C/conventional 200C/gas 6.
  2. Lightly coat the flour tortillas with the olive oil.
  3. Place the tortillas oil side down onto a large baking tray.
  4. Evenly spread the mango chutney over each tortilla.
  5. Scatter the torn turkey or ham, grated cheddar, and chopped spring onions on top.
  6. Bake the assembled tostados for 8 minutes.
  7. Slice the baked tostados into wedges and serve immediately while hot and crispy.
