Cheat's Chilli Prawn Noodles
This adaptable Asian main course is a quick and healthy dinner option. Using frozen prawns and pantry basics like tinned tomatoes and egg noodles, you can easily adjust the spice level to your preference. The dish comes together in a simple, flavourful sauce that simmers while you prepare the noodles, making it a convenient meal for four.
Ingredients
- 2 tbsp olive oil
- 1 medium onion roughly chopped
- 1 heaped tbsp coriander purée (from a tube)
- pinch of crushed dried chillies to taste
- 400g can chopped tomatoes with garlic
- 1 heaped tbsp tomato purée
- 1 tbsp vegetable bouillon powder
- half a pack Chinese egg noodles
- 400g frozen prawns (large North Atlantic ones are tender and juicy)
Method
- Warm the oil in a wok or deep pan. Add the chopped onion, squeeze in the coriander purée and scatter the crushed chillies to your liking. Cook for 5 minutes until the onion softens without colouring.
- Add the tinned tomatoes along with 11⁄2 canfuls of hot water, then stir in the tomato purée and bouillon powder. Season generously. Bring to a simmer, then reduce the heat slightly and cook the sauce for about 15 minutes until it thickens a little but remains loose. As the sauce cooks, place the noodles in a bowl and cover them with boiling water. Give them a stir and leave to stand.
- Once the sauce is done, drain the noodles and add them to the pan with the frozen prawns. Mix everything thoroughly and cook for 2 minutes only to thaw and warm the prawns. Check the seasoning, adding more chilli flakes or a touch of sugar if desired. Serve in bowls with spoons, offering crusty bread to mop up the remaining sauce.
