Chang's Crispy Noodle Salad

This speedy salad comes together in under 15 minutes for a satisfying crunch. Finely shredded cabbage is combined with sliced green onions and toasted almonds. A simple dressing of white vinegar, caster sugar, soy sauce, sesame oil and olive oil is mixed in. The final touch is adding a packet of crispy fried noodles right before you serve it to maintain their texture.

Chang's Crispy Noodle Salad

Ingredients

  • 1 (100 g) packet fried Chinese noodles (Changs Original)
  • 1/2-1 Chinese cabbage or 1/4 savoy cabbage, shredded finely
  • 6 green onions, sliced to 4-5mm
  • 100 g lightly roasted slivered almonds or 100 g pine nuts
  • 1/4 cup white vinegar
  • 1/4 cup caster sugar
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1/2 cup olive oil

Method

  1. Halve the cabbage and remove the thick central core from each piece by cutting a V shape into the flat side.
  2. Use a sharp knife to shred the cabbage very finely, working from one end and holding it securely.
  3. Place the shredded cabbage, sliced green onions and almonds together in a large salad bowl.
  4. Pour the dressing over the salad ingredients and toss everything to combine thoroughly.
  5. Stir the packet of Original Fried Noodles into the salad immediately prior to serving.
