Celeriac Coleslaw
This French-inspired coleslaw showcases the fresh, crisp qualities of raw celeriac. Paired with tart apple and tossed in a simple, creamy dressing of mayonnaise, Dijon mustard, lemon juice, and parsley, it creates a vibrant and textured side dish. Ingredients
- 1/2 celeriac
- juice 1/2 lemon
- 1 Granny Smith apple
- 5 tbsp mayonnaise
- 1 tbsp Dijon mustard
- handful chopped parsley
Method
- Peel the skin from the halved celeriac using a vegetable peeler or sharp knife. (To store the remaining half, rub a little lemon juice on the cut surface to prevent browning.) Slice it thinly, then cut the slices into very fine, long matchstick strips. Prepare the apple in the same way, removing the core first.
- Combine the mayonnaise, mustard, lemon juice, and parsley in a bowl. Add the prepared celeriac and apple strips and toss everything together until evenly coated.
