Ingredients
- 1 large cauliflower, in florets
- 6 tablespoons butter
- 1/4 cup flour
- 1 teaspoon salt
- 2 cups milk
- 2 tablespoons prepared mustard
- 1/2 cup soft breadcrumbs
- 1/4 cup grated parmesan cheese
Method
- Boil the cauliflower florets in water until they are crisp tender, which should take about 6 minutes.
- Drain the cauliflower and place it into a baking dish of 1 1/2 quart capacity that has been lightly buttered.
- Melt 3 tablespoons of butter in a small saucepan, then whisk in the flour and salt.
- Continue stirring until the mixture becomes bubbly, then slowly pour in the milk while stirring constantly until it thickens and becomes smooth, a process taking about 3 minutes.
- Mix the prepared mustard into the sauce and pour it evenly over the cauliflower in the baking dish.
- Melt the leftover butter, add the soft breadcrumbs, and toss them to coat thoroughly.
- Sprinkle the grated Parmesan cheese over the casserole, then distribute the buttered breadcrumbs on top.
