Caramelised Onions
This recipe guides you through creating perfectly sweet and sticky caramelised onions. Using a slow cooking process, the onions soften and turn golden, developing a rich flavour enhanced with brown sugar and balsamic vinegar. The result is a versatile condiment that can be served as a side or used to top various dishes. It yields enough for six servings and requires about 50 minutes of total preparation and cooking time.
Ingredients
- 2 tbsp olive oil
- 3 large onions (red or white), sliced
- pinch of salt
- 2 tbsp soft brown sugar
- 1-2 tbsp balsamic vinegar
Method
- Warm the olive oil in a large, deep frying pan.
- Place the sliced onions into the pan with a pinch of salt. Cook them slowly for 30-40 mins, stirring now and then so they do not stick. They should become soft and golden. Should the onions begin to catch, pour in a splash of water and stir.
- Stir in the soft brown sugar and balsamic vinegar. Continue to cook for another 5 mins, stirring occasionally, until the mixture is sticky, the sugar has dissolved, and the vinegar has reduced. Your caramelised onions are now ready to use.
