This flavourful British chutney is straightforward to prepare. Red onions are slowly cooked with sugar until soft, then simmered with red wine vinegar and red wine until a sticky consistency forms. A dash of grenadine syrup adds depth before it is cooled and jarred. It is an excellent condiment for buffets, lunches, or snacks, beautifully complementing cheeses and cold meats.

Caramelised Onion Chutney

Ingredients

  • 8 red onions sliced
  • 100g caster sugar
  • 100ml red wine vinegar
  • 100ml red wine
  • dash grenadine syrup

Method

  1. 1. Put the sliced onions and caster sugar into a saucepan, cover it, and cook until softened, about 10 mins. 2. Add the red wine vinegar and red wine, then simmer without a lid until the liquid reduces to a sticky texture, about 10 mins more. 3. Stir in the grenadine syrup until thoroughly combined. 4. Allow the mixture to cool completely before placing it into a sterilised jar and sealing it.
