Caramelised Onion Chutney
This flavourful British chutney is straightforward to prepare. Red onions are slowly cooked with sugar until soft, then simmered with red wine vinegar and red wine until a sticky consistency forms. A dash of grenadine syrup adds depth before it is cooled and jarred. It is an excellent condiment for buffets, lunches, or snacks, beautifully complementing cheeses and cold meats.
Ingredients
- 8 red onions sliced
- 100g caster sugar
- 100ml red wine vinegar
- 100ml red wine
- dash grenadine syrup
Method
- 1. Put the sliced onions and caster sugar into a saucepan, cover it, and cook until softened, about 10 mins. 2. Add the red wine vinegar and red wine, then simmer without a lid until the liquid reduces to a sticky texture, about 10 mins more. 3. Stir in the grenadine syrup until thoroughly combined. 4. Allow the mixture to cool completely before placing it into a sterilised jar and sealing it.
