Cappuccino Tiramisu
This Italian dessert offers a speedy twist on a classic. Sponge fingers are soaked in cold coffee and layered in glasses with Baileys ice cream. A whipped cream mixture flavoured with icing sugar and Baileys is added, and the whole dessert is finished with a scattering of chocolate flakes for a delightful treat.
Ingredients
- 8 sponge fingers halved
- cold coffee
- Baileys ice cream
- 142ml carton double cream
- 1 tbsp icing sugar
- 3 tbsp Baileys
- chocolate flakes
Method
- Place the halved sponge fingers into four serving glasses, pressing them down. Pour cold coffee over them until they are fully soaked.
- Add a layer of Baileys ice cream over the soaked sponge. Top with double cream that has been whipped with 1 tbsp icing sugar and 3 tbsp Baileys. Finish by scattering chocolate flakes over the top.
