Cappuccino Caramels
These homemade cappuccino caramels offer a delicious twist on a classic sweet. They combine buttery caramel with instant coffee granules, chopped walnuts and a hint of orange zest, all bound together with sweetened condensed milk. The mixture is cooked to a precise temperature, cooled and sliced into squares, resulting in a rich and flavourful confection perfect for sharing. This recipe makes about 48 pieces, or roughly 3 pounds of candy.
Ingredients
- 1 teaspoon butter, or more as needed
- 1 cup butter
- 1 (16 ounce) package brown sugar
- 1 (14 ounce) can sweetened condensed milk
- 1 cup light corn syrup
- 3 tablespoons instant coffee granules
- 1 cup chopped walnuts
- 1 teaspoon vanilla extract
- 0.5 teaspoon orange zest, or more to taste
Method
- Prepare an 8-inch square baking dish by lining it with aluminium foil and greasing the foil with approximately 1 teaspoon of butter.
- In a saucepan, melt 1 cup of butter. Add the brown sugar, sweetened condensed milk, corn syrup and coffee granules, stirring to combine. Attach a candy thermometer to the pan. Cook the mixture, stirring continuously, until it reaches 248 degrees F (120 degrees C), which should take around 20 minutes. Then take the pan off the heat.
- Mix the chopped walnuts, vanilla extract and orange zest into the caramel. Transfer the mixture into the prepared baking dish and allow it to cool completely at room temperature.
- Once set, lift the caramel block from the dish and peel away the aluminium foil. Cut the caramel into individual squares.
