These homemade cappuccino caramels offer a delicious twist on a classic sweet. They combine buttery caramel with instant coffee granules, chopped walnuts and a hint of orange zest, all bound together with sweetened condensed milk. The mixture is cooked to a precise temperature, cooled and sliced into squares, resulting in a rich and flavourful confection perfect for sharing. This recipe makes about 48 pieces, or roughly 3 pounds of candy.

Cappuccino Caramels

Ingredients

  • 1 teaspoon butter, or more as needed
  • 1 cup butter
  • 1 (16 ounce) package brown sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup light corn syrup
  • 3 tablespoons instant coffee granules
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon orange zest, or more to taste

Method

  1. Prepare an 8-inch square baking dish by lining it with aluminium foil and greasing the foil with approximately 1 teaspoon of butter.
  2. In a saucepan, melt 1 cup of butter. Add the brown sugar, sweetened condensed milk, corn syrup and coffee granules, stirring to combine. Attach a candy thermometer to the pan. Cook the mixture, stirring continuously, until it reaches 248 degrees F (120 degrees C), which should take around 20 minutes. Then take the pan off the heat.
  3. Mix the chopped walnuts, vanilla extract and orange zest into the caramel. Transfer the mixture into the prepared baking dish and allow it to cool completely at room temperature.
  4. Once set, lift the caramel block from the dish and peel away the aluminium foil. Cut the caramel into individual squares.
