Cantaloupe Peach Jam
This recipe guides you through creating a delightful homemade jam using ripe cantaloupe and juicy peaches. Ingredients
- 4 cups cantaloupe, peeled seeded and chopped
- 4 cups peaches, peeled seeded and chopped
- 6 cups sugar
- 1/4 cup lemon juice
- 1 teaspoon grated fresh lemon rind
Method
- Place the chopped cantaloupe and peaches into a large cooking pot.
- Cook the fruit for 15 minutes, stirring the mixture continuously.
- Mix in the sugar and lemon juice, stirring well to combine everything.
- Bring the mixture up to a rolling boil while you keep stirring.
- Reduce the heat and let the jam simmer for 30 to 45 minutes until it reaches a thickened state.
- Stir in the grated lemon rind and continue cooking for another 3 minutes, stirring constantly.
- Remove the pot from the heat and skim any foam from the surface of the jam.
- Carefully ladle the hot jam into sterilised jars, filling them to within 1/4-inch of the top.
- Eliminate any air bubbles from the jars and clean the rims with a damp cloth.
- Place the lids on the jars and screw the bands on firmly.
- Process the filled jars in a boiling water bath for 5 minutes.
