Cantaloupe Peach Jam

Ingredients

  • 4 cups cantaloupe, peeled seeded and chopped
  • 4 cups peaches, peeled seeded and chopped
  • 6 cups sugar
  • 1/4 cup lemon juice
  • 1 teaspoon grated fresh lemon rind

Method

  1. Place the chopped cantaloupe and peaches into a large cooking pot.
  2. Cook the fruit for 15 minutes, stirring the mixture continuously.
  3. Mix in the sugar and lemon juice, stirring well to combine everything.
  4. Bring the mixture up to a rolling boil while you keep stirring.
  5. Reduce the heat and let the jam simmer for 30 to 45 minutes until it reaches a thickened state.
  6. Stir in the grated lemon rind and continue cooking for another 3 minutes, stirring constantly.
  7. Remove the pot from the heat and skim any foam from the surface of the jam.
  8. Carefully ladle the hot jam into sterilised jars, filling them to within 1/4-inch of the top.
  9. Eliminate any air bubbles from the jars and clean the rims with a damp cloth.
  10. Place the lids on the jars and screw the bands on firmly.
  11. Process the filled jars in a boiling water bath for 5 minutes.
