Canjica (Brazilian Hominy Pudding)
Canjica is a classic Brazilian dessert with a pudding-like consistency, often enjoyed during the country's June winter festivals. This comforting dish is made by simmering dried hominy until tender, then enriching it with coconut milk, sweetened condensed milk and regular milk. It is spiced with cinnamon sticks, ground cinnamon and whole cloves before being finished with freshly grated coconut for texture and flavour.
Ingredients
- 1 pound dried hominy
- 8 cups water
- 2 (14 ounce) cans coconut milk
- 1 (14 ounce) can sweetened condensed milk
- 2 cups milk
- 2 tablespoons white sugar, or to taste
- 3 (2 inch) sticks cinnamon sticks
- 0.5 teaspoon ground cinnamon, plus more for garnish
- 8 whole cloves
- 1.75 cups freshly grated coconut
Method
- Place the dried hominy and 8 cups of water into a large saucepan and allow it to soak for 8 hours or overnight.
- The following day, bring the hominy and its soaking liquid to a boil. Lower the heat and let it simmer for about 1 hour until the hominy softens. Pour in the coconut milk, sweetened condensed milk, regular milk, 2 tablespoons of sugar, cinnamon sticks, 0.5 teaspoon of ground cinnamon and the cloves. Continue cooking on a low heat for approximately 15 minutes until the mixture thickens.
- Check the sweetness and add more sugar if desired. Mix in the freshly grated coconut. Serve the pudding in bowls and finish with a sprinkle of ground cinnamon.
