Canadian Cheddar Cheese Soup

Ingredients

  • 3 tablespoons butter
  • 1/4 cup carrot, finely grated
  • 1/4 cup onion, chopped
  • 3 tablespoons flour
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 3 chicken bouillon cubes, crushed
  • 2 cups milk
  • 2 cups water
  • 2 cups cheddar cheese, shredded (mild, medium, or old)

Method

  1. Melt the butter in a saucepan and cook the chopped onion and finely grated carrot until they become tender.
  2. Mix in the flour, paprika, dry mustard and the crushed chicken bouillon cubes.
  3. Slowly pour in the milk and water while stirring.
  4. Heat the mixture, stirring all the time, until it is smooth and thick and begins to boil.
  5. Take the saucepan off the heat.
  6. Slowly stir in the shredded cheddar cheese until it has completely melted.
  7. Serve the soup straight away, optionally garnished with chopped parsley.
