This flavourful dinner dish combines shrimp and scallops in a creamy, spicy Cajun-inspired sauce. The sauce is infused with fresh herbs and two types of cheese, then served over cooked fettuccine pasta. Cajun Seafood Pasta

Ingredients

  • 1 pound dry fettuccine pasta
  • 2 cups heavy whipping cream
  • 1 cup chopped green onions
  • 1 cup chopped parsley
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh thyme
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 1.5 teaspoons crushed red pepper flakes
  • 1 teaspoon ground white pepper
  • 0.5 pound shrimp, peeled and deveined
  • 0.5 pound scallops
  • 0.5 cup shredded Swiss cheese
  • 0.5 cup grated Parmesan cheese

Method

  1. Bring a large pot of lightly salted water to a rolling boil. Add the fettuccine and cook until it is tender but still firm, which should take about 8 minutes. Once cooked, drain the pasta.
  2. While the pasta cooks, pour the cream into a large skillet. Place it over heat, stirring constantly, until it nearly reaches a boil. Lower the heat and mix in the green onions, parsley, basil, thyme, salt, black pepper, red pepper flakes, and white pepper. Allow the sauce to simmer until it thickens, for 7 to 8 minutes.
  3. Add the shrimp and scallops to the skillet, stirring to combine. Continue cooking until the shrimp are fully cooked and no longer translucent.
  4. Mix the Swiss and Parmesan cheeses into the skillet, stirring until they are fully melted and incorporated into the sauce.
  5. Spoon the finished sauce over the drained fettuccine pasta.
  6. Serve the dish immediately while it is hot.
