Cajun Seafood Pasta
This flavourful dinner dish combines shrimp and scallops in a creamy, spicy Cajun-inspired sauce. The sauce is infused with fresh herbs and two types of cheese, then served over cooked fettuccine pasta. It's a satisfying and robust meal that comes together in about 45 minutes, perfect for a special weeknight supper or entertaining guests.
Ingredients
- 1 pound dry fettuccine pasta
- 2 cups heavy whipping cream
- 1 cup chopped green onions
- 1 cup chopped parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh thyme
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1.5 teaspoons crushed red pepper flakes
- 1 teaspoon ground white pepper
- 0.5 pound shrimp, peeled and deveined
- 0.5 pound scallops
- 0.5 cup shredded Swiss cheese
- 0.5 cup grated Parmesan cheese
Method
- Bring a large pot of lightly salted water to a rolling boil. Add the fettuccine and cook until it is tender but still firm, which should take about 8 minutes. Once cooked, drain the pasta.
- While the pasta cooks, pour the cream into a large skillet. Place it over heat, stirring constantly, until it nearly reaches a boil. Lower the heat and mix in the green onions, parsley, basil, thyme, salt, black pepper, red pepper flakes, and white pepper. Allow the sauce to simmer until it thickens, for 7 to 8 minutes.
- Add the shrimp and scallops to the skillet, stirring to combine. Continue cooking until the shrimp are fully cooked and no longer translucent.
- Mix the Swiss and Parmesan cheeses into the skillet, stirring until they are fully melted and incorporated into the sauce.
- Spoon the finished sauce over the drained fettuccine pasta.
- Serve the dish immediately while it is hot.
