Cajun Deep Fried Turkey

Ingredients

  • peanut oil, for frying (about 5 gallons)
  • 1 (10 -15 lb) turkey
  • 6 teaspoons salt
  • 6 teaspoons paprika
  • 6 teaspoons white pepper
  • 6 teaspoons cayenne
  • 6 teaspoons Accent seasoning (optional)
  • 16 ounces liquid crab boil concentrate

Method

  1. Rinse the turkey thoroughly, both inside and out.
  2. Prepare a marinade by mixing one part liquid crab boil concentrate with four parts water.
  3. Stir all the dry seasonings into the crab boil solution.
  4. Taste the mixture and adjust the seasoning if necessary.
  5. Using a kitchen syringe, inject the seasoned liquid into the turkey, spacing injections about 2 inches apart.
  6. Wrap the turkey in foil and place it in the refrigerator to marinate overnight.
  7. Heat approximately 5 gallons of peanut oil to 350°F.
  8. Important: Continuously monitor the oil temperature with a fryer thermometer, as it can ignite if it exceeds 375°F.
  9. Place the turkey in the frying basket and lower it very carefully into the hot oil.
  10. Fry the turkey for 5 minutes per pound of its weight.
  11. After about 1 hour, check the internal temperature with a meat thermometer. it should read 180F.
