Brownie Muffins
These decadent brownie muffins offer a delightful cross between a classic brownie and a muffin. They are wonderfully moist and rich, featuring cocoa, chocolate chips and a hint of cinnamon. The optional addition of walnuts or pecans provides a pleasing crunch. This quick bread recipe yields nine large muffins and can be prepared and baked in about half an hour, making it a perfect treat for any occasion.
Ingredients
- 3/4 cup flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1/4 cup chocolate chips
- 1/4 cup cocoa
- 2 eggs, lightly beaten
- 1 cup sugar
- 2 -3 teaspoons vanilla extract
- 1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

Method
- Heat your oven to 350.
- Mix the flour, baking powder and cinnamon together in a bowl.
- Place this bowl to one side.
- Melt the butter in a small saucepan.
- Stir in the chocolate chips and cocoa powder continuously.
- Take the pan off the heat once the chocolate chips are nearly melted.
- Whisk the eggs, sugar and vanilla extract together in a large mixing bowl.
- Alternate adding the flour mixture and the chocolate mixture to the egg mixture, stirring only until everything is combined.
- Be careful not to overmix the batter.
- Divide the batter among a well-greased muffin tin or paper liners lightly coated with oil.
- The muffins can stick if not prepared properly.
- Top each muffin with extra chocolate chips and some chopped nuts.
- Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
