These decadent brownie muffins offer a delightful cross between a classic brownie and a muffin. They are wonderfully moist and rich, featuring cocoa, chocolate chips and a hint of cinnamon. Brownie Muffins

Ingredients

  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1/4 cup chocolate chips
  • 1/4 cup cocoa
  • 2 eggs, lightly beaten
  • 1 cup sugar
  • 2 -3 teaspoons vanilla extract
  • 1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

  • chopped nuts (to garnish)

Method

  1. Heat your oven to 350.
  2. Mix the flour, baking powder and cinnamon together in a bowl.
  3. Place this bowl to one side.
  4. Melt the butter in a small saucepan.
  5. Stir in the chocolate chips and cocoa powder continuously.
  6. Take the pan off the heat once the chocolate chips are nearly melted.
  7. Whisk the eggs, sugar and vanilla extract together in a large mixing bowl.
  8. Alternate adding the flour mixture and the chocolate mixture to the egg mixture, stirring only until everything is combined.
  9. Be careful not to overmix the batter.
  10. Divide the batter among a well-greased muffin tin or paper liners lightly coated with oil.
  11. The muffins can stick if not prepared properly.
  12. Top each muffin with extra chocolate chips and some chopped nuts.
  13. Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
