Brown Rice and Lentil Burgers
These versatile vegan patties combine brown rice and French lentils with sautéed vegetables and chipotle seasoning. The mixture can be shaped into burgers or pressed into a loaf for baking. They are satisfying served hot or enjoyed cold with your favourite condiments. This recipe yields 6 to 8 servings and takes roughly 80 minutes to prepare from start to finish.
Ingredients
- 1/2 cup French lentils, rinsed and drained
- 1 cup brown rice
- 2 tablespoons olive oil
- 2 garlic cloves, chopped
- 1 medium red onion, chopped
- 2 red bell peppers, diced
- 1 teaspoon sea salt
- 1 teaspoon dried chipotle powder or 1 teaspoon chili powder
- breadcrumbs (optional) or white flour (optional)
Method
- Place 1 1/2 cups of water into a medium saucepan and bring it to a boil.
- Stir in the lentils, lower the heat, and cook for about 15 minutes until they soften.
- Drain the cooked lentils and set them aside.
- While the lentils cook, boil 2 cups of water in a separate medium saucepan and add the brown rice.
- Cover the pan, reduce the heat, and let it simmer for about 40 minutes until the rice is just tender.
- Drain the rice and set it aside.
- Warm the olive oil in a sauté pan and cook the chopped garlic, onion, and peppers until they begin to brown.
- Heat your oven to 350.
- Transfer the cooked lentils, rice, and sautéed vegetables to a large mixing bowl.
- Mix in the sea salt and the chipotle or chilli powder thoroughly.
- If the mixture seems too wet, incorporate a small amount of breadcrumbs or flour to help it bind.
- Form the mixture into patties for burgers and place on a baking sheet, or press it into a loaf pan.
- Bake the patties until slightly firm for about 15 minutes, or bake the loaf for about 25 minutes.
