Broad Bean, Mint and Feta Salad
This vibrant salad combines wholesome greens with filling couscous for a satisfying meal. Inspired by Moroccan flavours, it features broad beans, fresh mint, spinach, black olives and crumbled feta cheese. The dish comes together quickly, making it an ideal choice for a speedy lunch or a light supper. It's packed with fresh ingredients and textures for a delicious and healthy option.
Ingredients
- 250g couscous
- 300g frozen broad beans
- 125g baby spinach leaves
- 20g pack fresh mint
- 85g black olives
- 200g pack feta cheese
Method
- Cook the couscous by adding boiling water, following the directions on the packet.
- While the couscous cooks, boil the 300g frozen broad beans as per the pack instructions. Rinse them under cold running water in a colander to cool, then drain. Place the 125g baby spinach leaves in a colander and pour boiling water over them to wilt. Rinse with cold water and squeeze out the excess moisture.
- Mix the prepared broad beans, spinach, 20g pack of fresh mint and the 85g black olives into the couscous. Crumble the 200g pack of feta cheese into the mixture. Add a generous drizzle of olive oil, season to taste, and toss everything together thoroughly.
