Broad Bean, Mint and Feta Salad

Ingredients

  • 250g couscous
  • 300g frozen broad beans
  • 125g baby spinach leaves
  • 20g pack fresh mint
  • 85g black olives
  • 200g pack feta cheese

Method

  1. Cook the couscous by adding boiling water, following the directions on the packet.
  2. While the couscous cooks, boil the 300g frozen broad beans as per the pack instructions. Rinse them under cold running water in a colander to cool, then drain. Place the 125g baby spinach leaves in a colander and pour boiling water over them to wilt. Rinse with cold water and squeeze out the excess moisture.
  3. Mix the prepared broad beans, spinach, 20g pack of fresh mint and the 85g black olives into the couscous. Crumble the 200g pack of feta cheese into the mixture. Add a generous drizzle of olive oil, season to taste, and toss everything together thoroughly.
