Breaded Garlic-Parmesan Chicken Thighs
This recipe delivers all the crunch of fried chicken without the mess. Boneless chicken thighs are coated in a savoury mix of garlic, Parmesan, and panko breadcrumbs, then baked until perfectly crisp and tender. It's a simple yet impressive American-style main course, ready in about 40 minutes and serving eight people. The result is a golden, flavourful crust with juicy meat inside.
Ingredients
- avocado oil cooking spray
- 1 large egg
- 2 teaspoons granulated garlic
- 1 teaspoon salt, or to taste
- 0.25 teaspoon ground black pepper, or to taste
- 1 cup Italian-style panko bread crumbs
- 0.5 cup shredded Parmesan cheese
- 2 pounds boneless, skinless chicken thighs
Method
- Set your oven to 400 degrees F (200 degrees C). Use avocado oil spray to coat a 9x13-inch baking dish.
- In a wide, shallow bowl, mix the egg, granulated garlic, salt, and pepper thoroughly. On a separate plate, combine the panko bread crumbs and shredded Parmesan cheese.
- Dry the chicken thighs with paper towels. Dip each piece first into the egg mixture, then press it into the panko and cheese blend to coat both sides. Shake off extra crumbs. Arrange the coated thighs in the prepared pan in one layer and spray their tops lightly with avocado oil.
- Place the pan in the oven and bake for 25 to 35 minutes. The chicken is done when it is no longer pink inside, the juices run clear, and an instant-read thermometer shows at least 165 degrees F (74 degrees C).
