Bread & Butter Pickles
This traditional recipe yields crisp, sweet pickles without peeling the cucumbers. Sliced cucumbers are combined with onions, bell peppers, and garlic, then covered with ice before being packed into jars with a hot, spiced vinegar syrup. The process takes about 55 minutes and results in several jars of delicious homemade pickles.
Ingredients
- 4 quarts cucumbers, sliced
- 6 medium onions, sliced
- 2 green bell peppers, chopped
- 3 red bell peppers, chopped
- 3 garlic cloves, whole
- 1/3 cup salt, table
- 5 cups sugar
- 1 1/2 teaspoons turmeric
- 1 1/2 teaspoons celery seeds
- 2 tablespoons mustard, seed
- 3 cups cider vinegar
Method
- Leave the skins on the cucumbers.
- Slice the cucumbers thinly.
- Mix in the sliced onions, chopped peppers, whole garlic cloves, and salt.
- Cover the vegetable mixture completely with cracked ice.
- Stir everything together well.
- In a separate pan, combine the sugar, turmeric, celery seeds, mustard seed, and cider vinegar.
- Pour this vinegar mixture over the iced vegetables.
- Place the pan on the heat and bring the contents just to a boil.
- Immediately pack the hot pickle mixture into sterilised jars and seal them.
