⏱ 45 mins 🍽 ['8', '8 servings'] 🌶 brazilian 🏷 Side dish

This is the classic Brazilian preparation for white rice, a staple side dish for lunch and dinner. The key technique involves frying the rinsed rice with minced onion and garlic in oil before simmering it in hot water. This process, passed down through family kitchens, ensures the cooked grains remain separate and fluffy rather than sticky. The recipe uses simple pantry ingredients and takes about 45 minutes to prepare, yielding 8 servings. For a richer flavour, you can substitute some of the water with chicken broth.

Brazilian White Rice

Ingredients

  • 2 cups long-grain white rice
  • 2 tablespoons minced onion
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 4 cups hot water

Method

  1. Rinse the rice under cold running water using a colander, then set it aside to drain.
  2. Warm the vegetable oil in a saucepan. Cook the minced onion in the oil for one minute. Mix in the minced garlic and continue cooking until it turns a golden brown colour. Add the rinsed rice and salt, cooking and stirring until the rice starts to take on a light brown hue. Pour the 4 cups of hot water over the rice mixture and give it a stir. Lower the heat, place a lid on the saucepan, and let it simmer for 20 to 25 minutes until all the liquid has been absorbed.
