Braised Onion Slices
This recipe transforms simple onions into a flavourful side dish. Slices are first seared, then gently simmered in broth until tender. A finish of Scotch whisky creates a rich, savoury sauce that beautifully complements roasted or grilled meats. Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 large onions, peeled and cut into 1 inch slices
- 1 teaspoon salt
- 1/2 teaspoon finely ground black pepper
- 1/4 cup beef broth or 1/4 cup vegetable broth, of choice
- 1/4 cup Scotch whisky
Method
- Combine the butter and olive oil in a heavy-based saucepan and allow them to melt together.
- Place the onion slices in the pan and cook them for 2 minutes to achieve a good sear.
- Stir in the salt, black pepper, and your chosen broth, then lower the heat.
- Put the lid on the pan and let the onions simmer for 10 minutes, or until they become tender.
- Pour in the Scotch whisky and allow the liquid to reduce a little.
