Braised Onion Slices

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 large onions, peeled and cut into 1 inch slices
  • 1 teaspoon salt
  • 1/2 teaspoon finely ground black pepper
  • 1/4 cup beef broth or 1/4 cup vegetable broth, of choice
  • 1/4 cup Scotch whisky

Method

  1. Combine the butter and olive oil in a heavy-based saucepan and allow them to melt together.
  2. Place the onion slices in the pan and cook them for 2 minutes to achieve a good sear.
  3. Stir in the salt, black pepper, and your chosen broth, then lower the heat.
  4. Put the lid on the pan and let the onions simmer for 10 minutes, or until they become tender.
  5. Pour in the Scotch whisky and allow the liquid to reduce a little.
