Bombay Popcorn Mix
This homemade Bombay popcorn mix is a wonderfully economical snack. It features salted popcorn tossed with roasted chickpeas, peanuts and sultanas. The whole combination is coated in a fragrant, spiced butter blend. It delivers a satisfying mix of textures and classic Indian flavours, perfect for sharing. The recipe takes about 30 minutes to prepare and serves four people.
Ingredients
- 400g can chickpea drained and dried
- 1 tsp vegetable oil
- 50g butter
- 2 tsp garam masala
- 1 tsp curry powder
- 70g bag salted popcorn
- 85g peanut
- 100g sultana
Method
- Set your oven to 200C/180C fan/gas 6. Place the drained chickpeas on a baking tray with the vegetable oil. Season them, give the tray a good shake for an even coating, then bake for 25 mins.
- While the chickpeas bake, melt the butter in a microwave. Stir the garam masala and curry powder into the melted butter, seasoning with salt and pepper. In a large bowl, combine the salted popcorn, peanuts and sultanas. Add the baked chickpeas, then pour the spiced butter mixture over everything. Toss thoroughly until all components are well coated.
