This gentle French soup is traditionally considered a restorative for convalescents or a remedy for hangovers. It creates a soft, comforting broth from garlic, bay leaves, and sage. The soup is poured over olive oil-brushed toast and finished with a garnish of grated Gruyère cheese, making it a soothing dish for an unsettled stomach.

Boiled Water Garlic Soup

Ingredients

  • 4 -12 slices French bread, thin slices of day-old (1 to 3 per person, depending on size they should fill the bottom surface of the soup plate you are u)
  • 4 tablespoons olive oil
  • 4 cups water
  • salt
  • 24 garlic cloves, sliced lengthwise
  • 2 bay leaves
  • 1 sprig sage (if you use dried sage, tie 1 teaspoon of it in a cheesecloth bag so you can easily remove it from th)
  • gruyere cheese, grated for garnish

Method

  1. Use olive oil to brush the slices of French bread, then toast them in an oven at 350 degrees until they are dry, which takes about 10 minutes. Set the toast aside.
  2. Place the water, salt, sliced garlic cloves, bay leaves, and sage sprig into a large saucepan.
  3. Bring the mixture to a boil, then lower the heat, cover the pan, and allow it to cook for 20 minutes until the garlic has softened completely.
  4. Take out the bay leaves and sage, then transfer the soup to a blender and puree until smooth.
  5. Return the pureed soup to the saucepan, cover it, and let it steep for a minimum of 10 minutes before you plan to serve.
  6. Warm your soup plates in the oven briefly, then arrange the prepared toast slices to cover the bottom of each plate.
  7. Scatter the grated Gruyère cheese over the toast, followed by a drizzle of any leftover olive oil.
  8. Bring the soup back to a boil, then ladle it directly over the cheese-topped toast and serve straight away.
