This straightforward blueberry tart delivers fantastic flavour with minimal effort. It features a simple pastry crust pressed into a pan, filled with a sweet and lightly spiced blueberry mixture, and baked until set. The remaining berries are added after baking for a fresh finish. It is an excellent choice for showcasing seasonal blueberries and can also be prepared in a pie or quiche dish. The recipe yields 8 to 12 servings and takes about 75 minutes to complete.

Blueberry Tart

Ingredients

  • 1 cup flour
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup butter, cold
  • 1 tablespoon white vinegar
  • 1 cup sugar
  • 2 tablespoons flour
  • 1/8 teaspoon cinnamon
  • 4 1/2 cups blueberries, divided

Method

  1. Heat your oven to 400°F and coat a 10-inch springform pan with non-stick spray.
  2. Mix together the flour, salt and sugar.
  3. Use a pastry blender or fork to cut the cold butter into the dry mixture.
  4. Stir the white vinegar into the pastry dough.
  5. Press the dough evenly onto the base and about 1 inch up the sides of the prepared pan.
  6. To make the filling, whisk the sugar, flour and cinnamon in a bowl.
  7. Stir in 2 1/2 cups of the blueberries.
  8. Spread this blueberry filling evenly over the prepared crust.
  9. Bake the tart for 1 hour.
  10. Take the tart from the oven and scatter the remaining 2 cups of blueberries over the top, pressing them in gently.
  11. Allow the tart to cool fully.
  12. Take off the springform rim and serve the tart directly from the pan base.
