Blueberry Tart
This straightforward blueberry tart delivers fantastic flavour with minimal effort. It features a simple pastry crust pressed into a pan, filled with a sweet and lightly spiced blueberry mixture, and baked until set. The remaining berries are added after baking for a fresh finish. It is an excellent choice for showcasing seasonal blueberries and can also be prepared in a pie or quiche dish. The recipe yields 8 to 12 servings and takes about 75 minutes to complete.
Ingredients
- 1 cup flour
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1/2 cup butter, cold
- 1 tablespoon white vinegar
- 1 cup sugar
- 2 tablespoons flour
- 1/8 teaspoon cinnamon
- 4 1/2 cups blueberries, divided
Method
- Heat your oven to 400°F and coat a 10-inch springform pan with non-stick spray.
- Mix together the flour, salt and sugar.
- Use a pastry blender or fork to cut the cold butter into the dry mixture.
- Stir the white vinegar into the pastry dough.
- Press the dough evenly onto the base and about 1 inch up the sides of the prepared pan.
- To make the filling, whisk the sugar, flour and cinnamon in a bowl.
- Stir in 2 1/2 cups of the blueberries.
- Spread this blueberry filling evenly over the prepared crust.
- Bake the tart for 1 hour.
- Take the tart from the oven and scatter the remaining 2 cups of blueberries over the top, pressing them in gently.
- Allow the tart to cool fully.
- Take off the springform rim and serve the tart directly from the pan base.
