Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon sugar
  • 1 onion, finely chopped
  • 1 large apple - peeled, cored and diced
  • 2 pounds red cabbage, cored and thinly sliced
  • 0.5 cup vegetable broth
  • 4 tablespoons cider vinegar
  • salt to taste
  • fresh-ground black pepper
  • 2 tablespoons lingonberry jam

Method

  1. Melt the butter in a large stock pot. Stir in the sugar and cook for about 5 minutes until it takes on a light caramel colour. Add the chopped onion and diced apple, cooking and stirring for about 5 minutes until the onion begins to soften. Introduce the sliced cabbage and cook for about 5 minutes until warmed through.
  2. Pour in the vegetable broth and cider vinegar, and add salt. Cover the pot and allow it to simmer for about 30 minutes so the flavours meld. Season with black pepper and, if using, stir in the lingonberry jam near the end of the cooking time.
