This is a traditional Brazilian recipe for black beans with bacon. The dried beans are first soaked and then pressure-cooked until tender. A separate mixture of garlic, onion, tomato, carrot, and diced bacon is sautéed until the bacon is crisp. This flavourful mixture is then combined with the cooked beans and pressure-cooked again briefly before being finished with fresh parsley, salt, and pepper.

Black Beans with Bacon

Ingredients

  • 1 (8 ounce) package dry black beans
  • 2.5 quarts water
  • 3 tablespoons olive oil
  • 3 cloves garlic, peeled and minced
  • 1 large onion, chopped
  • 1 tomato, cubed
  • 1 carrot, cubed
  • 0.5 pound bacon strips, diced
  • 1 tablespoon chopped fresh parsley
  • salt and pepper to taste

Method

  1. Soak the dry black beans in a pressure cooker with enough water to cover them for 12 hours or overnight.
  2. Add 2 1/2 quarts of water to the soaked beans, filling the cooker about two-thirds full. Cover and cook for 30 minutes at 10 pounds pressure, then set aside.
  3. Warm the olive oil in a saucepan. Cook the minced garlic and chopped onion until tender. Add the cubed tomato and carrot, cooking for about 5 minutes. Mix in the diced bacon and cook until it is crisp and browned.
  4. Transfer the vegetable and bacon mixture into the pressure cooker with the beans. Cover and cook for approximately 10 minutes more at 10 pounds pressure. Garnish with chopped parsley and season with salt and pepper before serving.
