This cherished recipe for osso bucco features veal shanks braised with marsala wine, aromatic vegetables and reconstituted porcini mushrooms. The dish simmers slowly until the meat becomes exceptionally tender. It is traditionally served over a bed of creamy polenta, mashed potatoes or egg noodles for a comforting and flavourful meal. The recipe was famously shared by Biba on her Italian cooking programme.

Biba's Osso Bucco

Ingredients

  • 1 cup tomato sauce
  • 2 stalks celery, diced
  • 1 carrot, diced
  • 1 ounce dried porcini mushrooms
  • 1 cup chicken broth
  • 1 cup marsala wine
  • 1/2 cup water, hot
  • 4 veal shanks
  • 1/2 cup flour
  • salt, to taste
  • fresh ground black pepper, to taste
  • 3 -4 tablespoons olive oil

Method

  1. Place the dried mushrooms into a small bowl and pour the hot water over them.
  2. Let the mushrooms soak until soft, ensuring you reserve the soaking liquid afterwards.
  3. Sprinkle the veal shanks with salt and pepper, then coat them in the flour, tapping off any extra.
  4. Warm the olive oil in a deep skillet and sear the veal shanks on each side until browned, using more oil if necessary.
  5. Take the veal out, put the diced vegetables and soaked mushrooms in the pan and cook for 5-10 minutes until they take on colour, adding extra oil as required.
  6. Place the veal back into the skillet, pour in the marsala wine and let it cook down for 5 minutes.
  7. Use a utensil to loosen all the tasty browned pieces from the base of the pan.
  8. Pour in the reserved mushroom liquid, tomato sauce and chicken broth.
  9. Let it cook gently on a low heat for at least 45 minutes, or place in an oven at 325 degrees for 1 and 1/2 hours, until the veal is fork tender.
  10. Plate the osso bucco over a choice of creamy polenta, rice, mashed potatoes or egg noodles.
