Best Toffee Ever
This homemade toffee recipe creates a rich, buttery confection layered with semisweet chocolate and crunchy almonds. It is a straightforward American candy perfect for festive occasions and gift-giving. The method involves cooking a sugar and butter mixture to a precise temperature before setting it with chocolate and nuts. The process takes about 100 minutes and results in approximately 2 1/2 pounds of delicious toffee.
Ingredients
- 2 cups unsalted butter
- 2 cups white sugar
- 0.25 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 cup finely chopped almonds
Method
- Assemble all of your ingredients.
- Place the butter, sugar, and salt into a large, heavy-bottomed saucepan and set it over the heat.
- Stir the mixture continuously in one direction until the butter has fully melted, which should take about 5 minutes.
- While that cooks, prepare a 9x13-inch baking dish by lining it with parchment paper, allowing the paper to overhang on two opposite sides.
- After the butter melts, cease stirring and allow the mixture to come to a boil. Once boiling, cook it, stirring just 2 to 3 times, until it achieves a dark amber colour and registers 300 degrees F (150 degrees C) on a candy thermometer, a process taking 20 to 30 minutes.
- Without delay, pour the hot toffee into your prepared dish. Scatter the chocolate chips evenly over the top and leave them to soften for 1 to 2 minutes.
- Take a spatula and spread the now softened chocolate into a thin, uniform layer across the toffee.
- Sprinkle the finely chopped almonds over the chocolate layer, pressing them down gently. covering your hand with a plastic bag can help keep things tidy.
- Transfer the toffee to the refrigerator and chill until completely firm, about 1 hour. Then, use the overhanging parchment paper to lift the set toffee from the dish.
- Break the large slab of toffee into smaller pieces and keep them stored in an airtight container.
