Best Guacamole
This recipe guides you through creating a classic Mexican guacamole dip. It uses a short list of ingredients to ensure a fresh and vibrant flavour. The method is straightforward and quick, taking just 10 minutes to prepare enough for 8 people. It's an ideal choice for serving as a snack, starter, or as part of a buffet spread, accompanied by tortilla chips.
Ingredients
- 1 large ripe tomato
- 3 avocados very ripe but not bruised
- juice 1 large lime
- handful coriander leaves and stalks chopped, plus a few leaves, roughly chopped, to serve
- 1 small red onion finely chopped
- 1 chilli red or green, deseeded and finely chopped
- tortilla chips to serve
Method
- On a chopping board, crush 1 large ripe tomato into a pulp using a large knife, then transfer it to a mixing bowl.
- Cut 3 avocados in half and remove the stones, reserving one. Spoon the flesh into the bowl containing the tomato.
- Add the juice from 1 large lime, a handful of chopped coriander, 1 finely chopped small red onion, and 1 deseeded and finely chopped chilli to the bowl. Season with salt and pepper.
- Roughly combine all the ingredients with a whisk. To store, place a saved avocado stone in the guacamole, cover it with cling film, and refrigerate until you are ready to serve.
