Berry Daiquiri
This berry daiquiri is a wonderfully refreshing cocktail, ideal for warm weather. It combines ripe strawberries or raspberries with white rum and a zesty mix of lime and lemon juice. Blended with ice, it creates a deliciously cool, slushy drink that's perfect for serving at gatherings. The whole process takes only about 10 minutes, making it a quick and impressive choice for entertaining.
Ingredients
- 175g ripe strawberries or 200g/8oz raspberries (or use a mix of 100g/4oz strawberries and 100g/4oz raspberries)
- about 6 ice cubes
- juice of 1/2 lime
- 1 tbsp lemon juice
- 100ml white rum
- small lime slice to serve
Method
- 1. Should you be using raspberries, blend them into a purée first, then pass it through a sieve to remove the seeds. 2. Place roughly 6 ice cubes into a high-powered blender and crush them. 3. Add the prepared berry pulp or whole strawberries, along with the juice of 1/2 lime, 1 tbsp lemon juice, and 100ml white rum. 4. Blend everything together once more until smooth. 5. Pour the mixture immediately into a pre-chilled cocktail glass. 6. Garnish the drink with a small slice of lime.
