Prepare these speedy beef fajitas in only 15 minutes to serve four people. This Mexican main course combines charred peppers and onion with seasoned leftover beef, all wrapped in warm tortillas with fresh salsa, soured cream, and coriander for a complete and satisfying dish.

Beef Fajitas

Ingredients

  • 1 red onion, cut into thin wedges
  • 1 each red, green and yellow pepper, deseeded and sliced
  • 2 tsp sunflower oil by Sainsbury’s
  • 11/2 tbsp Cajun seasoning
  • Juice of 1/2 lemon
  • 350g leftover cooked beef, cut into strips
  • Wholemeal tortilla wraps by Sainsbury’s, to serve
  • 230g tub fresh tomato salsa by Sainsbury’s, to serve
  • 6 tbsp Sainsbury’s be good to yourself soured cream, to serve
  • 1/2 x 31g bunch fresh coriander by Sainsbury’s, roughly chopped, to serve

Method

  1. Combine the onion and pepper slices with the oil in a bowl. Place a large griddle pan on the heat and add the vegetables.
  2. Allow the vegetables to cook for 5-6 minutes, turning them until they are charred and have softened a little. Add the Cajun seasoning and lemon juice, then put in the beef strips and mix everything together.
  3. Continue cooking for another 3-4 minutes until the beef is thoroughly heated.
  4. While the beef cooks, warm the tortilla wraps following the instructions on the packet.
  5. To assemble, spoon the hot beef and vegetable mixture onto the warmed tortillas. Add dollops of tomato salsa and soured cream on top.
  6. Finish by scattering over the chopped coriander, then roll up the wraps and serve immediately.
