Ingredients

  • 1 (14 1/2 ounce) can Mexican-style stewed tomatoes with jalapeno peppers (I recommend Del Monte)
  • 1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans, drained
  • 2 garlic cloves
  • 1 -2 teaspoon minced jalapeno chile (optional)
  • 1/2 teaspoon ground cumin
  • 1 cup cubed grilled chicken
  • 4 flour tortillas
  • 1/2 cup shredded sharp cheddar cheese
  • shredded lettuce (optional)
  • diced avocado (optional)

Method

  1. Drain the canned tomatoes, keeping the liquid aside.
  2. Chop the drained tomatoes into pieces.
  3. Place the chopped tomatoes, the reserved liquid, drained beans, garlic cloves, optional minced jalapeños, and ground cumin into a large skillet.
  4. Cook the mixture for 5-7 minutes until it has thickened.
  5. Add salt and pepper to taste, if you like.
  6. Stir the cubed grilled chicken into the skillet.
  7. Lay the flour tortillas flat on a grill or in a separate skillet.
  8. Spoon approximately 3/4 cup of the chicken and bean mixture onto each tortilla.
  9. Sprinkle the shredded sharp cheddar cheese over the top.
  10. Cook for about 3 minutes until the tortilla base browns and the cheese has melted.
  11. Add optional shredded lettuce and diced avocado as a garnish before serving.
