Bean, Feta & Herb Dip
This creamy and flavourful dip combines cannellini beans with tangy feta cheese and a bright mix of fresh herbs like dill, mint, or chives. It's a quick and healthy Greek-inspired snack that comes together in a food processor in only 10 minutes, perfect for serving with crudités or pita.
Ingredients
- 400g can cannellini bean
- 200g feta cheese
- 1 tbsp lemon juice
- 1 garlic clove crushed
- 3 tbsp chopped dill, mint or chives (or 1 tbsp each)
Method
- 1. Drain the cannellini beans and give them a rinse under cold water. 2. Place the rinsed beans into your food processor along with the feta cheese, 1 tbsp lemon juice, and the crushed garlic clove. Process the mixture until it becomes completely smooth. 3. Add your chosen fresh herbs, such as dill, mint, or chives, to the processor. Season the dip with pepper to your taste.
